We travel a lot to Scotland and get a different B & B every day or two. The North East is really lovely and that is also the cheapest, you can usually get B & Bs there quite easily and if you go to Spey Bay you MUST call in at the Baxters factory and see them and sample their soups and come home with some of their fare! If you go further up to Sutherland it is much more rural and you can see where people used to live before the Highlands were cleared, to see the remains of the houses is quite sad as you can just imagine the communities that would have lived there and how hard it must have been for them.
The West coast of Scotland is really BEAUTIFUL, however the prices are higher there and if you go in high season you are travelling in nose to tail traffic. (Which is why we tour the NE!)
Whereever you go you are guarenteed a good time. If I have one word of advice, having done a lot of B&B I would reccommend that you try to always stay at somewhere reccommended by the Scottish Tourist board. Some places that just do B&B are brilliant, but we once stayed at a place that was appaling and we had no come back as it was not listed with the tourist board.

Edinburgh and around that area is good for culture and the fringe festival-
If you like the great outdoors the lochs are goof - Loch Awe/Goilhead etc there are lovely log cabins you can stay in with the forestry commission
And i'f you're really adventerous go to the Grampians, its amazing and kind of strange as everything shuts at 5pm but the coast line its totally beautiful- lots to do!
Fort William and Lochaber, great scenery and very peaceful
