A spare set of underwear and any medications you have to take.
I'm sure prescription medications are an obvious given, so I'll focus on the other important details.

Adults can normally make it between flights with nothing more than a magazine in their own language and perhaps a puzzle book.

As far as kids go, I flew from the US (where I'm from) to Amsterdam (we currently live in Holland) and I made sure to pack my daughter some easy and light snacks like a ziploc bag of cherrios and a few packs of graham crackers. I also made sure to bring 3 or 4 coloring books and a 16 count box of crayons. I would also recommend you pack a change of clothes and a travel pack of wipes. I always make sure to travel with a small bottle of hand sanitizer!!

I'm not sure if you've been to the Schiphol airport or not (Amsterdam) but it's very open and very nice!

I wish your family the best in your travels!
Prescription medications.
aspirin ear plugs handkerchief your papers sleep covers and the D's so they can play..
I think 081 said it pretty well, but I'd also like to add that you might want to bring GUM. It sometimes helps during turbulence.
A good book, a spiral notebook, a pen, and a loaded and charged MP3 player with music and books on tape. A small amount of spare cash, credit card, and your ID/Passport.

That's it! More than that is too much to lug around. No, really. I'm not kidding. Okay, maybe a palm pilot instead of the MP3 player... and MAYBE a laptop if you've got work, but THAT'S IT!
