If you like museums, the Musee Marmatton (sp?) in the 16th arrondissement houses Claude Monet's work--much of it was donated by Monet's son. I would recommend the Musee Jacquemart Andre, located in a hotel particulier that was owned by art collectors. There are fabulous collections. The Musee Nissim de Camondo has an interesting collection too. It was the mansion of a wealthy art collector whose son, Nissim, was killed in WWI. The last in the family was killed in Auschwitz.

The Parc Monceau and the Parc Montsouris are two great parks off the beaten track. I would also recommend the Bois de Bologne, where Parisians flock when the weather is nice. You can rent bikes or enjoy a picnic there. The Bois de Bologne is located on the edge of the 16th, a very wealthy, calm neighborhood. If modern architecture is your thing, check out Le Corbusier's Maison Blanche, but be sure to check about visiting hours, because they are very limited.

The Marais is one of the best places to stroll! Although not off the beaten path, most tourists don't usually hit the Place des Vosges on their first trip to the city. It has been called the most beautiful square in Paris, and has lots of cafes, shops, as well as a nice garden. If you like literature, you would be interested to know that Victor Hugo's house, which is in the square is free to the public. The Hotel Forney was once a mansion and is now an art library nearby. A queen's lover (I can't remember which one) was killed in a dual with another lover in the courtyard. The architecture is neat, you can have a look at the library, use free bathrooms and buy some postcards!

Someone recommended Rick Steve's guide to you, and I would have to second that motion. His walks are excellent!

As far as churches, the biggest gothic cathedral in the city, with many fewer visitors than Notre Dame, is St. Eustache. It is huge and often empty. Take the metro to Chatelet-Les Halles.
