Suggested routes for a 7-10 day hike in France, doing aprx. 15 miles a day, sleeping in inns & small hotels.?

Looking for suggested 7-10 day hikes in France, doing around 15 miles per day. Not camping out, but hiking from town to town, staying in B&Bs or small inns or hostels. Thinking about taking the dog, so suggestions there would be welcome also. Not looking to climb huge mountains (Alps/Pyrenees), but some stress-free relaxation. Time frame would be this August. I've heard to stay away from the coast at that time due to crowds. Open to suggestions!

Travel Tips
I've done most of my hiking in Alsace and think this is a good destination in August - there are plenty of small villages, vineyards, hilly landscape, a ballon if you're really keen, and lovely little hotels. Good places to visit are Pfaffenheim, Riquewihr, Kaysersberg and Colmar.
