How do i get my gravy to taste good?

i want to get some input on how to make good gravy. When i make my rice and peas and chicken my gravy is never up to par like my mom's or aunt's. what do you suggest that i do ?>

I know you are referring to the way Bajans make their gravy, so here goes. If you are making boiled chicken, then that is your gravy right there. If it is like a sunday and you are doing baked chicken, then the gravy is basically onions sauteed then add water, then a sprig of thyme (which you can take out later) half a carrot fine, some people like a bit of a beet, and of course BROWNING! Some worcheshire (I know I spelt that wrong), some ketchup and paprika. let it boil a bit to reduce, and if you want to add drippings from the baked chicken and a bit of flour.
