cancunmap.com - it shows the route onto Hwy 180 "Libre" from the airport, so that may help. And it shows part of the inland route to Tulum.

I never pay attention to highway numbers here but you will find the way to Tulum well marked. And from Coba to Tulum now is mostly a very nice new road.
From the Cancun airport, you can take go south of the airport, no need to go through Cancun. Again, not sure of highway numbers but the free one should have signs saying "libre" with the arrows to the toll road marked "cuota". And at Ideal (which is almost not a town), you will turn right. Not sure if it is near completion but has been much construction on this road. Make sure you drive it in the daylight---many parts did have big dropoffs with no shoulders.
