Don't know what kind of excursions you are looking for but a few of my favorites are Joe's Jeep Adventure (which includes swimming in a cenote, ziplining), parasailing, jungle tour, SubSee (underwater glass boat to the coral reef), boat over to Isla Mujeres for the day, Tulum (ruins), There are so many tours in Cancun. Your resort will have many options through tour companies onsite. Swimming with the dolphins at Dolphin Discovery on Isla Mujeres or at Dreams Hotel. Definitely Xcaret!!! There is so much history and you will learn a lot while doing alot. They have snorkeling, actual shows at night that is awesome!! A building where's nothing but butterfies, there's just too many things to mention. You can go their website and find out what they have!! They even have a mini beach. It it kinda expensive (about 100 dlls a person) but it is very well worth it!

Depends on what your looking for.

Tulum - the ruins is good
further away is Chichin Itza which is awesome
some great snorkeling at Xel-Ha
you can catch a ferry to Cozumel
or get wrecked in Carlos and Charlies.
the bull fight is about the best ... very entertaining with more than just the blood and gore of the actual fight.
I've taken a few tours with Aquaworld. You can check out what they have at www.aquaworld.com.mx
i went to cancun last year having never been before. Aquaworld were the best value for money and seemed to offer things for a range of abilities - you can learn to scuba dive, or if less adventurous their jungle tours and snorkelling tours are good for complete beginners. I'm pretty sure they also offer cruises of surrounding area. Not sure of their website but google aqua world mexico and you probably find them - they are the guys with the big sky rocket thing on the end of the "hotel zone" in cancun
