Usually not too late. Or else they could lose their job. They are either on time or a few minutes away.
Hardly ever, they will cut some other part of the cruise short to avoid that. Because as soon as they get back to port, they start loading supplies for the next group of passengers. Not being ready for them would be extremely costly.
I've been on four cruises and they all have been early docking. Its the Customs and Immigration part that can take a while, but I guess that depends if you go to another country or not. Getting on and off a cruise is the worst part - the rest is a party!

Ship's have also been forced to make late arrivals due to hurricanes and other extremely severe weather.
