Best things to do to make the most of a Harbor Dinner Cruise and make it special?

I am taking my girlfriend on a Harbor Dinner Cruise for her birthday. It'll be her first birthday since we started dating and I want to make the most of everything. She is getting flowers at work, so that's covered and we'll be staying over-night and going to the beach the next day. -- She's never been on a boat before but loves the ocean and is excited about going on the cruise ride.
What can I do to help make the Dinner Cruise itself as memorable as possible? Little things you might not know about unless you've been on a few before. -- FYI, all the 2-person tables were taken so that isn't an option. -- Thanks

Travel Tips
There really isn't much since they take care of everything. Make sure you buy plenty of drinks, that you dance with her and that she brings a sweater as it gets cold at night. Other than that, just have fun.
