You will need to exchange your money when you get to Cuba. I would bring Euros since the Cuban banks might not be too happy about the dollars
Euros are well received...us dollars will cost you a tiny bit more...
There is a dual currency system in Cuba. Since 2004, all tourists are required to use the Convertible Peso. You can exchange your international money into the convertible peso at the airport when you arrive. If you're coming from the U.S., you should change your money into Canadian dollars or Euros BEFORE leaving the states, because there is a 10% penalty placed on exchanging US dollars in Cuba.

Make sure you use up all your pesos before you leave, because the exchange rate for changing back is pretty bad, and you can't exchange the cuban money outside of the country. It's like monopoly money!
