You need to get tickets for the street party, in fact you will need tickets for most things at new year. If you look on the internet for Edinburgh Street party you shoud get the details.... Hope you have fun

I'm going over for new years as well, I'll be watching your answers cos I don't know what to do either!
you will have a ball of a time dont worry
from the scots
If it is not too crowded (due to the New Year crowd), pack a picnic lunch and take a hike up Arthur's Seat (the big hill/ mtn behind the palace - palace not castle). You will go up and around to a meadow like area and at the end of the meadow is the remains of an old church (basically only a doorway at this point) with a beautiful view over Edinburgh. Usually there are not a lot of people around there and it would be a nice place to have a picnic with your partner. It's not a very long or difficult hike either. There used to be a great sandwich shop just off Blackfriar's St on High St (the royal mile), not sure if it is still there.

It is hard to give a lot of advice without knowing how bad the crowds will be. I always avoided the area during New Year. Normally I would recommend a stroll down High Street and stop at some of the shops along the way. There is a Whiskey shop on the end near the castle that may offer whiskey tastings (they give you a place mat with several types of whiskey and a shot of each, like a wine tasting). If you like to drink, the Eerie Pub Crawl can be fun and get a souvenir T-shirt at the end (custom wine bottles too for purchase). The castle & palace touring of course. If available, there are ghost tours that will tell you stories of Edinburgh and take you underground to see the excavated remains of the old town. There are boat tours a little north of the main city (take a bus) that will take you out to a more islolated area for an hour or two. Canon's Gait & Finnegan's Wake both have live music most nights but can get crowded.

I'm not sure of actual New Year activities and what you need. I would recommend investing in a phone call to the Tourist Centre in Edinburgh for details on activities & bookings. You will want to schedule as much as possible now.
If you get into a pub in the centre of Edinburgh early, and stay there. You'll be able to go to the street party without tickets. Nowhere else in the entire world comes anywhere near an Edinburgh hogmanay.
i havent stayed in them but

i would guess a hotel which will be indiviual apartments

I would suggest you visit Edinburgh Castle, Hollyrood Palace, Royal Yacht Britannia, Edinburgh Zoo. Also there will be a German Market and Ferris wheel on Princes Street.
