If there is one authentic Egyptian food that I must try before I die, what is it? |
Travel Info As you see in my photo, I am not a Masria (I wish I am...) so I'd really appreciate it if you could also describe what this food is made of or how the taste like, is it spicy, sweet, salty, etc.? Travel Tips Egyptian ta3maya is the absolute BEST! I've never ever tasted any better! It's basically falafel, but you've never tasted falafel till you've tasted it Egyptian style. Koshari is also a must have. Sounds weird, but is totally good! It's basically layered spaghetti, macaroni or a small size pasta, rice, brown lentils, fried onions and topped with a spicy (hot) tomato sauce. Of course you have to cook everything before you layer it. It's delish! And finally fattah is some good comfort food. The way my mom-in-law makes it is to take pita bread and toast it until it's crispy, break them into a few pieces then layer it in the bottom of a dish. Cook beef or lamb cubes (or even chicken) in a stock with onions, carrots, minced garlic, cardamom (about 5 pods or more), and when the meat/chicken is done, fry it in a little ghee (samna) just a little to brown it on the outsides. Take a couple spoons of the hot samna and drizzle it over the pita. While the meat is cooking, cook the rice. Egyptian rice is more authentic for this recipe, but any type except instant will do. Rinse the rice and heat a couple spoons of oil, butter or ghee. Fry minced garlic just a little so that the flavors come out but don't let it start to brown. Add the water and salt and bring to a boil, then add the rice and cook till done. When it's finished, layer it over the pita. You can layer the meat in with the rice too, but we prefer the meat on the side. Then take a ladle and drizzle a couple ladle-fulls of sieved stock over the rice. It shouldn't be soupy, just enough for the pita to soak up with a little to spare. Then serve! Oh, and you can make a couple different types of sauce to go over it, but I love it just the way it is. http://www.wasfasahla.com/docs/recipe.cf...
