Travel Info Native foods of the island of Guam, Saipan, Roto, or Tinian? a 14 yr old could easily make...and not have to spend alot of time...? We are having a "united we can day" in my geography class and I was assiged to make a native dish from the island of Guam. i thought there was bound to be someone on this site that is from there or knows something about it. i really need some cooking insturctions that are easy to follow and ingredients that aren't too uncommon. ("kid friendly"..lol) any thoughts? Travel Tips There are tons of recipes to choose from. I am in a neighboring island, Saipan (and it is spelled Rota, btw). Here are some of the most common recipes here: (Make all three, if you can-- these are the staple in Chamorro specials) Red Rice: I tablespoon achote seeds (or 1/4-1/2 tsp achote powder) 4 tablespoons boiling water 2 slices bacon 1/2 of a 3inch wide onion (medium sized), chopped 2-3 pcs garlic, chopped 2 cups white, long grained rice 2-3 cups water (may need to add a little bit more if the rice is too dry) If using raw achote seeds, soak the seeds in hot water until the water turns red. You may need to use the back of a spoon to press the color out. Sieve this mixture. Keep the liquid, throw away the seeds. (Careful, achote can stain!) Fry bacon until cooked but still soft. Add garlic and onion. When onion is translucent (about 2mins), add the rice and the achote liquid. Stir for about 1 minute before adding water. Some types of rice need more water than others. The basic rule is that the water level should be 1 inch higher than your rice. Let boil and then reduce the heat to medium low. Cook for about 20-30 minutes, stirring every now and then to even the color out. RECIPE 2: Barbecued Chicken or Ribs (Quick and Easy) For every 5 lbs of meat, use 2 cups of soy sauce 1/2 of a whole garlic 1 lemon, sliced into wedges 1 tbsp black pepper (the more the merrier) 1/2 onion, sliced into rings hot pepper... tinian or thai (use real hot chilis)... depending on your tolerance Just mix all the ingredients, adding or subtracting as you need... some people add 1 cup of vinegar and a bit of sugar. and 1/4 cup oyster sauce (optional). Marinate meat overnight or for a couple of hours and then grill. CUCUMBER COCO 1 lb cucumber, sliced thinly 1 cup vinegar 1-2 tbsp choppped garlic chili pepper (use the hottest you can find) 1/4 tsp salt and pepper to taste (a couple of shakes from the salt and pepper mills) a bit of yellow food color Add all ingredients and refrigerate for 30 minutes. There you go, some of the recipes I usually enjoy here in Saipan. I know they like bbq..we always got invited for a bbq when I was there. You can use grill if you don't have to do bbq. Chamorro BBQ Sauce 1 c soy sauce 1 c white vinager 1 whole onion, thinly sliced 1 clove garlic, minced fresh parsley, minced fine salt black pepper Mix all together in a deep bowl, then add chicken or beef. If you still have time, you can cook rice. In every countries sometimes, there are different rice preparations, this is easy. For extra arrangement, If you have any kinds tropical stuff like coconut shells that you can buy in dollar store, then it would be good for presentation. 2 cups rice 2 tablespoons achuete seeds, this you can buy powder on any grocery store(spice counter) 2 cups water 1/2 teaspoon salt 3 teaspoons salad oil 1/2 cup chopped onions Rinse achuete seeds. Soak achuete seeds in 1/2 cup warm water and salt, and set aside for about 30 minutes. Rub achote seeds (about 20 strokes) to get achuete coloring; strain into a small bowl. Saute onions in salad oil until onions are tender. Add remaining 1 1/2 cups water and 1/2 cup achuete water (coloring); bring to a boil; then reduce heat to low temperature for 15 minutes. Serves 2 to 4. You can also add bits of pineapples on rice.. when I was in Guam. muddy zoop! |
