In Canada what is the most common finish for drywall.
Also on new builds do you use metal or timber or the internal stud partition walls

Wooden 2x6 studs are mostly used for residential construction, and for light commercial. Metal studs are used for most commercial construction, though becoming more common in residential.

Drywall is usually 1/2 inch or 5/8 inch gyproc with taped seams and a finishing coat floated on top.
Others

We use drywall here but it's kinda hard to find 1/4" drywall here, unlike the states. As far as I know, all are used.
