There have been times in France, Italy, and Spain when I just went up to the window 15 minutes before the train left and got the reservation (I only did it if obligatory). Otherr times, I had to take a later train because trains were full. I didn't have much luck trying to get a couchette on the same day, so definitely plan in advance for night trains. Others Yes.
