The bull might be our national animal, considering the election speeches that are going on right now, but apart from that there is no real connection. The stag is slightly different, there is a connection through the old myths, many names of heroes suggest that they were incarnations of a stag deity, but the stag is not officially a national emblem either.
If there was one for Northern Ireland it should be the horse, Armagh is named after Macha, a horse goddess.
Officially we don't have any emblematic or "national" animal, North or South.

The animals on the old Pound coins were heron, salmon, horse, stag, and there used to be a shilling coin with a hen and her chicks.
