There's no way to really avoid getting ill but you can minimize the possibility.

(1) Avoid drinking tap water and make sure bottled water is properly sealed. In some countries, people use deceptive practices and sell contaminated water as pure bottled water.
(2) Watch the foods you eat and eat only in reputable establishments. The better known hotel dining facilities are more expensive but they usually provide more reliable quality foods for obvious reasons.
(3) Don't eat any meat that you can't identify and be cautious about seafood, eg, oysters, clams and other shell fish. It's a good time to appreciate carb meals such as pasta. Avoid raw veggies as they might contain dangerous bacteria.
(4) Travel with Immodium or other gastric relief medicines. If you can find it, get a packet of charcoal from your pharmacy. It works like magic to cure stomach upsets and food poisoning when you mix it with juice.
(5) Use ointments or sprays that combat mosquito or other insect bites.
(6) If you are on medication, take it in your carry on bag and ask your doctor to give you duplicate prescriptions that can be filled in an emergency.
(7) Research the country that you are going to, so that you can prepare yourself. Get all the applicable inoculations or medicines, for example medicine for malaria, which is still common in some countries.
(8) Stay away from farms and avoid close contact with animals in general, as they might have communicable diseases.

You can get sick in any country even your own! So that's not really a good question! It's biased i must say, just b'caz you are going to a different country that doesn't mean you'll get ill, i think that's just plain out of line!!
Watch out for the food you eat and the water you drink. Always drink a bottled water and eat foods from a clean restaurants or fast food chain. Dining at a hotel is a safe way to handle this.
DONT DRINK WATER IN MEXICO. unless its bottled water. ITS VERY DIRTY WATER.
