Jamaica! I would take my hubby with me! We could use the time away together!
Italy. I hear wonderful things about the people, scenery, etc. I would take my mother with me and leave hubby at home to take care of the cats :-P He wouldn't get into running around a country to do nothing but look at old churches.

OH, or Ireland / Scotland. I've always wanted to go and hike from old castle to old castle. Ones that are inns so we could stay there. This one I'd take hubby and leave Mom home to take care of the cats.
Id go to Yellowstone National Park in Wyoming. This place is awesome with all the scenery, geysers, and animals. I would take someone who would also enjoy it.
