I'd recommend the New Forest and the Jurassic Coast (along the Dorset seashore).

Every man and his dog goes to Devon and Cornwall this time of year and these will still be busy, but you'll see some of the real England instead of the tourist traps.
In addition to the New Forest which can get very crowded try Pembroke in Southwest Wales. There are some beautiful places and lovely walks and it is not so crowded as Devon and Cornwall. The Cotswolds still count as South of England and they too are pretty and quaint. If you fancy somewhere else take the ferry from Portsmouth to the Isle of Wight.

Depends what you're after really.
But Devon / Cornall always a winner.
