You might want to edit your question to indicate exactly what area you are traveling to and what type of accommodations you will be staying at. Last time I was there, I was in the Punta Cana area which has mostly fairly upscale hotels. It is generally safe and no real health concerns, although I would probably stick to bottled water as an extra measure. The food was great, the people wonderful (and most spoke English fairly well), and the beach is one of the most beautiful I've seen.
