you know, the kind that the fish isn't cooked... its really good.
California Rolls.... Good
also Smoked EEL Fresh or saltwater.........SO GOOD!
If you are looking for unique sushi..it is always best to ask the "Itamae," the "chef" what is best at this time. There are certain seasons for certain fish. My favorite is anago...eel or kohada.
o-toro is the best

abiri salmon char char - partially cooked salmon

cooked ebi - shrimp

basashi - raw horse meat
Stingray.

Be careful your tongue might get numb.
