Travel Tips
The term "French Service" means that food is prepared, at least in part, by waiters at the table. A variety of menu items are traditionally presented in this manner. Some examples are crepe Suzette, Caesar salad, and fettuccine Alfredo.

There is an older meaning of French service which describes a continuation of the ceremoney of the grand couvert during the reign of Louis XIV but few people likely have even heard of this. This type of service was replaced by the so called Russian Service (Service a la russe) that was introduced by Prince Alexander Borisovitch Kourakone during the period of the Second Empire in France.
