Others I guess you mean "charqui"(char-key) which is dehidrated meat eaten since Inca times. It is a kind of jerky, mostly from llama, not beef. Charqui is eaten mainly by peasants in the highlands as they have no refrigerators there so this kind of meat can stay well for months. |
