Try the Algarve. Villa Moura is stunning, with a great golf course. Faro is okay, almost too quiet, but nice in the evenings. Lagos is very nice, as is Portimao, and Silves. Located away from the coast, Silves has a grand and rich history, and is where King Richard stopped on his way to the Crusades. You can walk the same ramparts he did, and see pretty much the same view as well. Porches has great pottery, and Albufeira has fantastic hotels.Vilamoura has a very nice golf course. The palace in Estoi is not be missed, (alas, we did), and Tavira is just too quaint for words. If you're interested in going to Spain as well, Vila Real is just across the Guadiana River from Spain, with no (at the time) check of passports. The shopping in all these towns is simply great. Take advantage of the pottery, (my collection is small, but admired) and take note of the chimmney tops as well!

Other Travel Tips
Carvoeiro / Benagil area of the Algarve would be perfect. Beautiful beaches and walks, lovely restaurants and bars but nothing too loud. I'd recommend hiring a car to explore the area - it's simply stunning. It's lively if you want that but there are hundreds of hidden bays and less 'touristy' parts too if you'd prefer something a little quieter. I've been many, many times and (hopefully) will go back many times again ...
