Mexico employment....for a canadian?

I have a canadian citizenship and I want to work for an adventure company in mexico...I really hate going through the work permit/visa/immigration papers/residence permit things, but they said that finding a job down there is not hard an they employ people from all over the world.......does that mean that they pay you 'under the table'. wouldn't it be easier for them to hire a local?

you can get a work permit if you have an sponsor...what kind of job are you looking for?...some resort will be more than happy to hire you and sponsor your stay in Mexico...they need people that can speak English..
