I used carboard, glue, paint, and other little accessories to build mine. But that was like 14 or 15 years ago so not sure how the kids are building them now. I built Mission Dolores and it wasn't half bad for a 4th grader. But I do remember some kids having these perfect looking missions that looked like they came from a kit; we called them "Instant A's" I remember the Mission being Santa Barbara too. So maybe you should build the SB Mission, go down there and buy one of their easy to assemble kits. I'm pretty damn sure they bought these easy to put together kits; they just looked too perfect to be homemade.

If you want to be incredibly authentic, you could make little adobe bricks.

You may want to try using sugar cubes, I used them as my main building material. I used a file to shape the cubes. By using spray paint lightly it colored the sugar along with glue it made for a pretty good mission. It took some extra time but we were not allowed to use a kit. hope this helps
i did mine out of styrofoam back in elementary school. i also had a friend make one out of gingerbread.

whatever suits your fancy.
You can go to a large craft shop such as Michael's and buy a mission kit. If it doesn't come with it, buy plaster to coat it with.
