Bargain with them. In Taiwan you can bargain in various places - I even got a discount in a department store once. It's ok to bargain in a night market too.

Since you are in the Taiwan section of Answers, I assume you are talking about Taiwan. Here, bargaining is the normal way of doing things just about anywhere you shop. If you are a customer, you would never accept the listed price of a product. If you are a seller, you would automatically raise the price of your products, knowing that you will have to sell at a cheaper price.
If customers are hard bargaining, be polite, but keep in mind what your profit margin is. Don't cheat yourself! Bargain just as hard with them, but make sure you make a profit.
