What is the best type of place to stay in Waterford?

Travel Info
I want to know if i should stay in a Bed and Breakfast, Motel, Hotel or Hostel. I am not worried about the price but want to get an authentic feel for Ireland so do not want to do big chain hotels.

Travel Tips
I personally really enjoyed the B&B experience. If you can make the trip over to the Mizen Head area (southwest corner of Ireland), I'd recommend The Heron's Cove B&B.
